Rafael Santo is Sustentu Wine Club’s Head Sommelier and Pairing Specialist. He leads the wine programme at Stock Exchange Hotel in Manchester and brings over 10 years of experience across the UK’s top restaurants and hotels, including Lucky Cat by Gordon Ramsay. WSET Level 3 qualified and shaped by years on the floor, Rafael’s focus is simple: make it taste better. He selects wines with energy, balance and character, then turns pairing into something natural and effortless, so food tastes sharper, bottles disappear faster, and the table feels like a night out.
Rui Santil is Sustentu Wine Club’s Wine Advisor and Educator. He holds the WSET Level 4 Diploma and judges for the International Wine Challenge, tasting wines from across the world. With over 10 years across the UK’s leading wine merchants and importers, including six years at Avery’s Wine Merchants, Rui’s job has always been the same: make it smarter and easier. He cuts through noise, explains wine in plain language, and helps members choose with confidence. Add hands-on harvest experience in the Douro and vineyard and cellar work in Champagne, plus countless tastings and wine dinners hosted across the UK, and you get someone who understands the journey from vineyard to glass and how to bring it to life at the table.
